The ‘grading’ of carcases starts with Chiller Assessment programs, regularly monitored by AUS-MEAT – the independent industry-funded institution in charge of establishing and controlling Australian meat specifications. We adhere to and maintain the practices required to meet the strict Australian required to meet the strict Australian meat specifications.
To assure clients of our integrity and to develop buyer confidence we are especially rigorous during the testing of the rib eye to assess: Marbling, Meat Colour, Fat Colour, Marbling
Marbling refers to the fat deposited between muscle fibres of the M. longissimus dorsi muscle - it is assessed and scored against the AUSMEAT / MSA Marbling reference standards. The AUS-MEAT / MSA Marbling system provides an indication of the amount of marbling in bee.
Meat Colour refers to the predominant colour of the rib eye muscle (M. longissimus dorsi). Beef and/or Veal meat colour is assessed on our chilled carcases at the bloomed rib-eye muscle area (M. longissimus dorsi) with scores according to the AUS-MEAT colour reference standards.
